I’m the type of person who can’t eat the same thing two days or two weeks in a row. I get tired of certain meals and food items quickly, and I’m constantly looking to switch it up in the kitchen!
As a therapist who values her spare time (and energy), quick, healthy, and easy-to-prepare meals are of the utmost importance for me from week to week.

I’m not a food blogger, whatsoever. As a matter of fact, I am a proud consumer of food blogger content. I appreciate them and their craft! (I even included this as a fun fact in my About section, haha!)

1. Lasagna Soup
One pot, you say?! That is probably the feature I love most about this recipe; fewer dishes to wash afterwards!
This soup is my favorite! It’s loaded with flavor and a great way to switch up your traditional lasagna dish.
I usually add about double-to-triple the amount of suggested red pepper flakes, to give it the kick that I desire. And don’t forget the mozzarella and ricotta cheese for topping!
Another one-pot meal = more time in your day that’s not spent washing a mountain of dishes.
This pasta is another one of my favorites that is packed with flavor.
You can even substitute and try different meats! (I use a turkey sausage.)
Skip the takeout and try making this easy, delicious soup from home! It’s another one of my absolute favorites.
I typically have to add in a good amount of salt to achieve the flavor I most enjoy. But after that, it’s gone within minutes! Yum.
Love this one! I typically opt for fresh green beans instead of the canned ones, though.
And it’s only three (3) steps! Can’t get much easier than that. Give it a try; you won’t be disappointed!
This faux-fancy bisque is sooooo hearty and delicious!
I complete this recipe with a batch of corn muffins. Perfection!
Better than takeout and made with just a few ingredients!
It’s also probably the quickest of these 7 meals.
The teriyaki chicken bowl is definitely a staple in my household, and great for meal prepping for the week ahead.
This creamy pasta is sure to please even the pickiest of eaters! There are few things I love more than pesto sauce.
Last, but certainly not least, this is one of my all-time favorite meals.
It’s a great spin on the usual salmon and rice meal! The coconut rice paired with the mango-avocado salsa is to die for!
